Ekuanot is a hop that we feel has masses of use in our beers. Often shouldered for its mega tropical hype contemporaries, we love the sheer array of flavour and aroma compounds this US slammer brings to the party; the real secret is to know just how much to use. Featuring 10kg in the whirlpool and 10kg offset against a 30kg Mosaic addition in the dry-hop, You Cannot Be Serious is an IPA with multiple levels of complexity layered throughout. The typical Polly's tropical notes are there; with mango, tangerine, bubblegum and berries from our old pal Mosaic, but with added levels of pithy lemon and lime, as well as sage, bay leaves and just a whisper of cedar. A modern day riff on a certifiable Polly's classic; this beer is an absolute banger. |
